I wasn't aware, until I read in the latest 'Descent' Cavers magazine(243) on the Mines and Mining page, titled: Rich savoury notes, about this 'Welsh Slate Cavern Aged Cheddar'.
An extract from the text reads; 'it had been matured for fourteen months in Llechwedd Slate Caverns at Blaenau Ffestiniog in North Wales before being sold on'.
The supermarket where you can purchase this cheese is mentioned in 'Descent', suffice to say, one of the big four!
Have I tried the cheese? Yes, however it is a strong cheese!
Also available at same supermarket is 'Wookey Hole Cave Aged Cheddar' and before you ask, I have tried that as well.
With a cheesy grin,
Spires. 😉

On the underground cheese theme - our supermarket used to sell 'Colliers' welsh cheddar with a picture of a coal miner on the packet, I don't think it was claimed that it ever saw the inside of a mine, however it was jolly nice cheese. I wonder if they still sell it

I remember some in our fridge... It wasn't there for long.

Have at it...

Anyone recall the cheese that was matured in the stone mines at Harpur Hill (Buxton), was it Hartington Stilton?
Was this before or after it became a mushroom farm?
Always remember, nature is in charge, get it wrong and it is you who suffers!.

Pretty sure they still sell Colliers at everyone's favourite horse-burger purveyors.

Llechwedd is a great place for underground cheese.

Big Pit has also been maturing cheese underground for a cheese company in recent years.
