Very good.

Where did you get the survey data from?

The data either came from notes on historical paper surveys or myself.

Essentially I geo-referenced the survey in space using surface and underground features, and then used altitude measurements from the surveys and elevation data to display the relative heights of each level.

There are deeper levels that aren't shown due to not having an altitude.

Very impressive, i've done some similar things in (ArcGIS / ArcScene) and (QGIS / qgis2threejs)
Geo-referenced mines plans combined with Google Earth images on Lidar.

But have always had issues with the final output files being either huge or not in a format Sketchfab likes.

Your file sizes seem sensible, can you give me any pointers on the software/workflow you used ?

For work I mainly used ESRI products but at home I only use QGIS which can be just as good if not better for some things.

Sketchfab takes .gltf files which QGIS2threejs can export to. Just keep in mind that the free account on SketchFab has a filesize limit of 50mb, so sometimes you need to slim down the size of your canvas. Elevation data and imagery are what eat up filesize, so either reduce your canvas size and/or decrease the resolution of your draped imagery. You can adjust these in each raster layer within QGIS2threejs.

Gave it another go and everything had moved on leaps and bounds with the plugin since I tried it a couple of years ago.

Everything worked pretty much straight away.

Would love to see Smallcleugh done this way.
