I don't know about the Menai Bridges, but the rock for the Conway Tubular bridge comes from the north east of the Great Orme. (according to Mr Oldham's Caves of North Wales)

There are of course plenty of quarries, both old an new nearby at Penmon.

I would assume that most of the stone came from Penmon (Dinmor)?

From the book I mentioned, "Ships brought red sandstone for the interior masonry from Runcorn, Cheshire and Anglesy limestone for the exterior work from Penmon".
